These Banana Oatmeal Cookies are hands down the very best banana flavored cookie I have ever had. Not only are they really are moist and chewy for days, they're unmistakably banana-y.

Banana may be one of those flavors that can get lost when you bake with it. It can be really subtle flavor. It always bums me out once that occurs, because I really like the taste of banana. And thus does the hubs.

So when good brewed banana treats come together, we go a little mad for them.

And they are so moistthey melt in your mouth. Plus, with both oats and banana in them, they're basically healthy, right? And perfect for breakfast!

Creating them is equally as easy as eating them.

You've got the typical suspects -- butter, brown sugar, white sugar, an egg, vanilla and mashed bananas. You start by mixing all those beautiful components together.

I have to warn you. The odor of the mixture -- with all the banana -- is intoxicating. The hubs was at the kitchen which makes the dough together with me (we left a deal that contained him with me) and we had to work hard not to put our faces, or a straw, straight into it.

You then add all of the ingredients (which means you simply use one bowl -- yay!) And combine it all together!

To bake them, spoon out about a tablespoon of bread and produce a thick disk, as opposed to a ball. They spread a bit when baking, so don't put them too close together. Bake them for approximately 10-12 minutes for a fine, moist cookie. So yummy!

One additional thing I love about this recipe is really where it came from.

My grandma (my father's mom) passed out in 2008. Once I started baking a lot a couple of years ago, my uncle gave me her cookbook he'd had didn't use. I have had it on my list to create several her desserts since.

It was a tradition for my grandmother to make them our website every Christmas! She also gave everyone a huge tin of them, which was quite an effort with 6 sons.

I now know precisely how much of an accomplishment it was! My goodness. She made them with a conventional gaufrette iron which goes over a open flame. My dad and I had them on the stove. They cook very quickly and you need to be precise. Too little time and they sort of disintegrated into iron. As long and they burnt to the iron and we all needed to scrub it out.

My father was minding the batter and removing the biscuits, I was working the iron, the hubs was timing things. It took many tries to get it right, but they had been so great! I have tried to create them on my own and it works. I'd really like to share the recipe, but the dang irons are so hard to discover. And pricey. Sooner or later, I would love to just earn a cookie cutter with the same gaufrette flavor.

For now though, I am sharing these biscuits. I really don't think I had them when she made thembut they're from her book.

It's such an enjoyable recipe book to look through, too. There are so many handwritten pages, including clippings and newspaper recipes which were taped to the book. I really like the way that they used to compose recipes from the newspaper -- they had the individual who submitted it's name and adorable little tales. It's so fun to read ! What a different time on earth!

Anyways, I do not know where this recipe originated from. The newspaper looks like it had been on a flier from their square dance class or something (they were big into square dancing). It's definitely from West Virginia, in which they lived.



In any event, I'm so happy to finally share a recipe from her book with you! I made a couple of adjustments to make them thicker and puffier and they are delicious. There'll be more to come from her recipe book, but for now like the banana.

Banana Oatmeal Cookies



Yield: 34-36 COOKIES


INGREDIENTS:

3/4 cup salted butter, softened (I use scatter Butter)

1 cup brown sugar, packed

1/2 cup sugar

1 egg

1 teaspoon vanilla extract



1 1/2 cups all purpose flour

1 1/2 tsp cinnamon

1 teaspoon baking soda

1/4 teaspoon ground cloves

2 tsp cornstarch

3 cups old fashioned oats

DIRECTIONS:

2. Add flour, cinnamon, baking soda, cloves and cornstarch and mix until combined.

3. Stir in oats.

4. Preheat oven to 350 degrees.

5. Spoon tablespoons of dough onto a cookie sheet covered with parchment paper. Flatten dough a little bit, into thick disks. They'll spread a little when baked.

6. Bake for 10-12 minutes or until edges just start to golden.
